Sesame-coated mackerel, served with Fromage Frais, Honey and Cider Vinegar

Ingrédients:
  • Four filleted mackerel
  • 100g organic Isigny Sainte-Mère country-style Fromage Frais
  • 20g acacia honey
  • 2cl cider vinegar
  • A little grated ginger
  • A little grated lime
  • Some finely chopped chives

For the sesame coating :

  • 50g white sesame seed
  • One egg
  • Two spoonfuls of flour
  • Salt and freshly-grounded pepper

Method:

Mix the fromage frais, the honey and cider vinegar. Season and add the ginger, lime, and chopped chives. Coat the mackerel fillets with the sesame mix, then cook them briefly in a frying pan. In each plate, put a layer of the fomage frais base and then lay two fish fillets on top.
