For one cake
- 3 eggs
- 70g butter
- 100g sugar
- a pinch of salt
- 150g of fromage frais at room temperature
- 8g of baking powder (about half a teaspoon)
- 180g plain flour
- 40g powdered almonds
Prepare a cake tin with a pinch of butter and a little flour; pre-heat the oven to 200 degrees C.
Cream the butter and sugar together, ideally with a food mixer. Add the eggs one by one and the scraped-out flesh of the vanilla pod. Keeping the food mixer turning, add the flour and the baking powder, followed by the powdered almonds and the salt. Slow the food mixer down and add the fromage blanc at room temperature. Pour the mixture out into the prepared cake tin.
Transfer the cake to the pre-heated oven at 200 degrees C, reduce the temperature to 160 degrees C and bake for 40 minutes. Leave it to cool down, then turn the cake out, ready to serve.
