pressed cheese from the Isigny terroir.<\/p>\n\n\n\n<p>Our Belle Saison is ripened for 3 to 5 months in the cellar on wooden boards to develop its rind and give it a fruity taste and a soft, melting texture.<\/p>\n\n\n\n<p>Our Master Cheesemaker keeps a very close eye on our Belle Saison so that it ripens evenly and develops a beautiful rind and a taste specific to our leave to drain slowly.<\/p>\n\n\n\n<p>It has a white, velvety rind and a soft, creamy centre with a slightly salty taste.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-characteristics-0\"><strong><strong>Characteristics<\/strong><\/strong>:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The milk for our Isigny Brie is collected within a 50 km radius of our Cooperative, in Normandy<\/li>\n\n\n\n<li>We make and mature it in our own cellars<\/li>\n\n\n\n<li>A melt-in-the-mouth, soft texture<\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-columns alignwide is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"h-our-abbaye-sainte-mere-saint-paulin\">Our \u201cAbbaye Sainte-M\u00e8re\u201d Saint-Paulin<\/h2>\n\n\n\n<p>Our \u201cAbbaye Sainte-M\u00e8re\u201d Saint-Paulin is a semi-hard, pressed, uncooked cheese with a mild flavour.<\/p>\n\n\n\n<p>It has an attractive yellow-orange rind and a soft texture and lightly salted flavour.<\/p>\n\n\n\n<p>Saint-Paulin is kept in the ripening cellar for five weeks, during which time it develops a mild, delicate flavour on the palate, with a hint of milk.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow d\u2019Isigny<\/h2>\n\n\n\n<p>Production of Pav\u00e9 d\u2019Isigny began in the 1980s.<\/p>\n\n\n\n<p>Pav\u00e9 d\u2019Isigny is an uncooked, cream-coloured pressed cheese that is dense yet smooth and soft. Its taste is reminiscent of lightly salted butter.<\/p>\n\n\n\n<p>This very tender cheese can be enjoyed by all the family. Serve cold, melted or hot in a toastie, hamburger or raclette.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-characteristics-2\"><strong><strong>Characteristics<\/strong><\/strong>:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It is ripened in our cellars in Normandy<\/li>\n\n\n\n<li>Medal-winner at the Concours G\u00e9n\u00e9ral Agricole agricultural show in 2022<\/li>\n\n\n\n<li>Normandy cow\u2019s milk collected within a 50 km radius of our Cooperative<\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-columns alignwide is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"h-petit-vey\">PEtit Vey<\/h2>\n\n\n\n<p>Petit Vey is a small, round, creamy cheese weighing 150 g.<\/p>\n\n\n\n<p>It is a mild, melt-in-the-mouth, delicate cheese.
