Roasted peaches with honey, sweet Isigny Sainte-Mère PDO Crème épaisse d’Isigny and Espelette pepper.

Ingredients

  • 4 organic peaches
  • 2 tbsp honey 
  • 30 g salted butter
  • 100 g Isigny Sainte-Mère PDO Crème épaisse d’Isigny
  • 1 tbsp icing sugar 
  • 4 pinches of Espelette pepper 
  • A few sprigs of fresh thyme.

Method

Wash and cut the peaches, leaving the skin on.

Melt the butter in a pan, then add the peaches with the sliced surface against the pan. Cook for 5 minutes, then add the honey. Turn the peaches over and let cook for another 5 min. 

In a bowl, mix the Isigny Sainte-Mère PDO Crème épaisse d’Isigny with the icing sugar. 

On each plate, serve two peach halves with two tablespoons of cream, a pinch of Espelette pepper and a few fresh thyme leaves.
