Cook the fresh peas in a pan of boiling water for 4 minutes. Drain, then cool in very cold water. Drain the peas again and place them in a blender with the Isigny Sainte-Mère PDO Crème Fraîche, half a clove of garlic, the mint leaves and salt. Combine until smooth. Serve.
