Roast aubergines with Fromage Frais Onctueux and mint


3 aubergines

2 tablespoon liquid honey

3 sprigs of mint

4 tablespoon olive oil

200 gr Isigny Sainte-Mère Fromage Frais Onctueux

Half a clove of garlic

Juice of half a lemon



Preheat the oven to 200°C in fan-assisted mode.

Wash the three aubergines and slice them into quarters lengthwise (if they are too thick, cut again lengthwise).

Place them on a baking sheet lined with greaseproof paper.

Mix the honey and the olive oil in a bowl. Salt the aubergines, then brush them with the honey and olive oil mixture, using a basting brush.

Bake for 30 to 40 minutes (baking time will depend on the oven, the aubergines should become golden brown and begin to collapse).

During this time, prepare the Fromage Frais Onctueux. Crush the half-clove of garlic, then mix it with the Fromage Frais Onctueux. Add the lemon juice, season with salt and pepper and drizzle with olive oil to finish.

Serve warm with mint leaves and Fromage Frais Onctueux.
