Preheat oven to 180°C. Cover a 23 cm-diameter baking mold with parchment paper. Leave the baking paper overhanging for easier removal from the mold.
In a mixer, combine the Palets Bretons cookies and melted butter.
Cover the bottom of the tin with this mixture, pressing down well with the back of a spoon.
In a mixer, beat the Isigny Sainte-Mère Fromage frais with the sugar, flour and eggs, one at a time. Add the cream and vanilla.
Pour the mixture over the cookie base.
Bake in the oven for 50-55 minutes, until the cheese mixture is firm to the touch.
Leave to cool, unmould and serve chilled with red berries and raspberry sauce.
